Description
Whole-bunch press at optimum ripeness. Juice was settled in stainles steel tanks overnight. The clear juicy was inoculated with commercial yeasts and moved to 225L french oak barrels. Fermentation lasted for 14days. The barrels were stirred and topped every month. Final blending and fining took place just before bottling in May 2020.
