Waterkloof Circle of Life White 2022

This wine can be described as an intriguing wine showing lots of different layers. The Sauvignon Blanc aromas are prominent on the nose, with beautiful lime and gooseberry aromatics showing off. The Chenin adds to the complexity with hints of florals, as well as notes of white pear. Very well integrated flavours on the palate with a tight mineral core, and creamy mid-palate from the Chenin Blanc, allow for great complexity and a persistent finish. The Sauvignon Blanc lends lovely, fresh acidity to the wine.

Grapes are hand-harvested and brought to the cellar by horses for hand-sorting. Whole-bunch pressing then takes place in a horizontal basket press for the finest juice. The majority of the varietal components are co-fermented spontaneously in old 600 litre barrels with wild yeast and the wine then spends approximately 12-18 months on the lees before bottling. The wine then spends another two years in bottle before release to develop further complexity. No additions other than sulphur. Vegan friendly, organic and biodynamic wine (non-certified). 99 barrels made.
