Description
A classic example of exquisite Stellenbosch Cabernet Sauvignon fruit. The wine displays a dense opaque colour. The bouquet is filled with alluring notes of black currant and perfumed violets. A dense palate which is packed with svelte tannins that are beautifully balanced by the cassis and blackberry fruit notes which linger seductively on the back palate. A seamless integration of oak spice and oak tannin entwined with the Cabernet’s masculinity adds real depth and complexity to the wine.

Vineyard
A selection of two magnificent vineyard sites in Stellenbosch. One at the upper end of Devon Valley has decomposed shale soils. With a 15%-20% clay content it lends itself intrinsically to Cabernet Sauvignon. Four different Cabernet clones adds diversity of fruit within this vineyard. Where the second vineyard in the heart of Stellenbosch, with its weathered granite soils adds finesse and flair to the wine versus the bold and black fruit from Devon Valley. Perfumed layers of Cabernet fruit are created in these vineyards. During harvest time meticulous tasting of fruit is crucial to determine when optimum phenolic ripeness is reached. Picking will only commence once the perfect balance is captured in the grapes.
Vinification
Grapes were crushed, destemmed and cold soak for two days prior to inoculation. Fermentation peaked at 28°C. With regular and controlled pump overs sufficient colour and tannin structure were extracted. After extended maceration the skins were gently pressed. Malolactic fermentation in barrel and tank.
