The palate is at first chewy and flavoursome as a wine gum, but closes in a gastronomic note when the fine grape tannins and the final salty, nutty twang pull through.

Granite soils, 150m above sea level, sea facing, sustainably farmed

Hand picked and chilled overnight. All of the grapes were fermented on the skins and whole bunches (around 50%) for 10 days. No sulphur was applied at crushing.

A evelage in older barrels followed this & continued for 6 months with no racking, battonage or sulphur additions.
