Vineyard
High clay, red soils with minimum irrigated soils create a balance between growth and flavour development.
Vinification
Each varietal was harvested by hand and fermented in small open-top stainless steel fermenters at 25-26 C for about 12 days. Pump overs and punch downs were alternated every four hours to ensure optimum extraction of colour and tannins.
Maturation
Maturation and malolactic fermentation were completed after 12 months in new and old French barrels.
