Vineyard
Grapes are grown on the Langrug property. Andrew bought the property in 2014. This makes it possible for us to farm the 8 ha of Pinot Noir the way we would farm Iona grapes, with passion and attention to detail. The decomposed Bokkeveld Shale soils are planted to 2 different clones, 115 and 667, resulting in wines with density and purity.
Vinification
Grapes are handpicked and kept overnight in a cold room. Then the grapes are destemmend, with a lot of care being taken to ensure we end up with as much as possible whole berries in the ferment. This is followed by cold maceration for period of 3-4 days. All the ferments are spontaneous with fermentation temperature peaking at 32°C. This is followed by extended maceration for a period of 4-5 days. After pressing, the wines are racked to barrel where malolactic fermentation takes place and wines are aged for 11 months in old 225L and 300L French oak barrels. After 11 months wines are raked and blended in stainless steel tanks, where stabilisation and clarification occurs naturally.
